Modist Brewing Looks to Push Boundaries in the North Loop

It took a while, but Modist is looking to change the way we think about beer. First of all, founders Eric Paredes, Kale Anderson, Dan Wellendorf, John Donnelly, and Keigan Knee are all in on some state-of-the-art equipment that gives them efficiencies that other breweries just can’t achieve. “We’ve been able to reach 90 – 98% efficiency with our beers” says Paredes.

This is in reference to the fact that they “pulverize” their grain into a powder and filter it out afterwards rather than having to clean out the mash with a shovel. Essentially they run it through an expensive piece of filtering equipment which produces a cake of the unusable material.

With the beer (reasonably priced at $3 for a tulip, and $5 for a 20 oz. pour) they hope to change the way we view beer. Paredes went on and on about how he wants people to see beer pair with food the same way that wine does. They aren’t big on making beers to fit into specific styles. Out of the gate they are pouring three beers, pHresh, TOATS, and Calibration Ale which are all very clean.

PHresh is your sessionable patio beer. It’s described as “a refreshing tart beer” which it certainly will be. The initial batch didn’t quite reach the pH balance they were looking for so it’s not very tart out of the gate, but I’m told the next batch will be. “It’s super drinkable. A gateway sour beer” according to head brewer Keigan Knee.

Toats is my favorite of their initial offerings. People tend to think of robust and roasty Stouts, and a velvety mouthfeel with oat based beers. This one is clean, sessionable, and damn tasty with a citrus kick in the nose. A perfect example that the color your beer does not determine the bitterness, nor the alcohol content of your beverage.

Calibration is the first beer that they brewed on their new equipment. Years of homebrew experimentation inspired this one. This tasty sipper clocks in as their highest ABV offering yet at 5.9%. Once again, this is very drinkable and the Pilsner malt comes through nicely lending it a touch of sweetness.

The wait is over and Modist definitely lives up to the hype. With those prices, Twins fans are going to be very happy.

Better Beer Society Introduces Brewer Approved Apprenticeship Program

The Better Beer Society is now taking applications for their Brewer Approved Apprenticeship Program. Better Beer Society has been working hard over the last few years to improve the draft line systems in Minnesota and you could be a part of this mission. If selected, you will be paid and if you complete the program you could be selected to take part in the Micro Matic Dispense Institute and become certified through them.

Tap lines are often overlooked and if they aren’t regularity cleaned, good beer can quickly taste awful. The mission of Better Beer Society is to improve beer education and to promote quality across the industry. If you’re looking for a career in beer, this could be it.

Here is what they are looking for:

– You are a sincere human being and love life.
– You take great pride in your work.
– You are genuine in your love for beer.
– You feel that beer deserves to be shown in its best light.
– Not afraid of a dirty job (sometimes cold and wet conditions).
– Mechanically inclined (Ikea does not count).
– Must be okay with off-hours (early mornings and overnights)

Five Beers to Try at Winterfest

If you are fortunate enough to attend the 15th annual Winterfest on either Friday or Saturday, you are sure to get a taste of some of the best locally made brews. Here are some of the highlights for both nights.

Friday:

Apricot Vista from August Schell Brewing Company – The latest in the Noble Star collection was aged for a year before Jace dropped 4,800 pounds of apricots in the tank. That tank by the way is from 1936 and will be on display at Star Keller when it opens in May.

Cherry Double Shot Double Black from Bent Paddle Brewing – This Bourbon barrel-aged version of their Black Ale received an infusion of cherries along with double shots of Madagascar Vanilla and Cold-Press. Have we mentioned that the Cold-Press comes from Duluth Coffee Company? Enough said.

Cabernet Barrel-Aged Belgian Dark Strong Ale from Dangerous Man – This is one of my favorite beers that they’ve made over at their Northeast brewery. Stone fruits and sweet caramel are prominent in this complex brew that was aged for almost a year in an oak Cabernet barrel. Let this one warm up a bit in your hand a little while and you’ll be rewarded.

300 from Fulton Brewing – All that really needs to be said about this brew is that it’s one of the best locally made IPAs. Expect blueberry and tropical fruits on top of a clean Pilsner malt base. Somehow the folks at Fulton are making this happen year-round and you won’t hear me complain.

Blackberry Gose from Junkyard Brewing – This Blackberry Sour Ale looks interesting and will be a nice change of pace from all of the really big beers being poured at the festival. Gose is an ancient German style of beer that goes back 1,000 years, and is unique in that it was traditionally brewed with salty water. Junkyard is based up in Moorhead so this also serves as a grand opportunity to get an introduction to their brews without the drive.

Saturday:

Imperial Cocoa Hefe from Blacklist Brewing – Chocolate and bananas will be the theme with this German-style Hefeweizen. Blacklist has always made interesting beers and they will now be able to better showcase them in their new space located in downtown Duluth.

Imperial Raspberry Truffle from Lupulin Brewing – I was able to try this version of their Porter at an event recently and I was impressed. The name of this one sums it up, big time chocolate with loads of raspberries. Who needs dessert?

2016 Fiddle Smasher from NorthGate Brewing – NorthGate is now 3 years old and they celebrated by releasing this Scottish Wee Heavy Ale. This version will be served from a cask and it tips the scale at over 8% ABV.

Saaz Pils from Minneapolis Town Hall Brewery – Sometimes there is nothing better than a clean Bohemian style Pilsner, especially when it’s made by someone who loves them as much as Mike Hoops does. Saaz hops are known for their spicy and earthy characteristics and they are what define this style of beer. This is one of my favorite styles of beer hands down.

Gin Botanical Freewheeler from Sociable Cider Werks – This cider looks interesting on many levels. For one, this sat in Wander North Distillery’s botanical basket and also on top of a bed of fresh spruce needles. Nothing says Minnesota like evergreens and apples.

Their special bottle releases have really been a hit and as you probably know, they sell out fast. Have a friend who has tried about every beer you can think of? Ha! There’s no way they have, and to prove it you should get them tickets to Northern Lights Rare Beer Fest coming up on March 12th at the Minnesota History Center. Here they will find the some of the rarest brews from some of the most respected breweries around the country. Here is the lineup from last year to give you a taste. $100

Land of Amber Waters
Got a history buff in your circle? Doug Hoverson’s Land of Amber Waters is the best record of the history of brewing here in Minnesota. This is still the best reference manual about the local suds that have been brewed over the years first published in 2007. One of the most impressive things about this written record are the illustrations of breweriana (yes, that’s a word) from around the state. This is one gift that should be on the coffee table of any Minnesota beer aficionado. $40

Lift Bridge Gift

If you are looking for a simple gift idea for a reasonable price, you might want to go with this gift pack from Lift Bridge Brewing. It includes a koozie, an empty growler, a key chain bottle opener, and a $15 gift card which is to be used to fill the growler with the beer of their choice. Indeed’s Sour Program on Display at Republic’s Sour Social this Saturday

Sour beers are huge right now and Indeed Brewing has one of the better programs around. The Wooden Soul Series is run by Adam Theis and is coming up on one year now. Adam was first introduced to sours at Town Hall Brewery where he brewed under Mike Hoops. “We got La Folie there [a sour beer from New Belgium] and I was like oh my god” says Theis. “It was really intriguing to me.”

He left Town Hall and went up to Third Street for a little while until he was contacted by Tom Whisenand and Josh Bischoff from Indeed. The Northeast brewery really wanted to start up a sour program and since they had worked with him previously at Town Hall, the move made sense. “I was a fan of sour beer, and I couldn’t pass that up” he says.

The Wooden Soul beers start out just like the others in that they are brewed and fermented at the regular brewery prior to making their way over to Adam’s house of funk which is just down Broadway. So far there have been five entries in the series, a set that rivals any being brewed here in the state.

The most popular one around town seems to be #3 which was a Sour Blonde Ale aged on cherries. This is not Adam’s favorite though so far. “A lot of people liked #3, but it wasn’t my favorite. I really like citrus fruit so I’d probably go with the grapefruit [Wooden Soul #4] one as my favorite” he says.

There is one that hasn’t been released yet that he’s very excited about. It’s a Red and Brown Ale mix which is aged on cherries in a very unique barrel. One that Adam states is working really well right now. This brew will make an appearance at Sour Social which is a beer dinner being hosted by Republic on Saturday. The event itself will pair six dishes with sour beers from both breweries (New Belgium and Indeed) in a casual environment.

Overall the sour program has been a successful operation and should only grow from here. “We’ve experimented with everything and we are always trying out new techniques. These beers are just a slow evolution that plays out right in front of us” says Adam.
