First dish: Oyster Shooter, with Fiery Hell, pickled celery and fire-roasted tomato
Second dish: Shrimp n’ Grits with Texas gulf shrimp and creole sauce
Third dish: Pit-roasted Pork Jowl, with Mac ‘n cheese fritters and green tomato chow-chow
Fourth dish: St. Louis-style Spare Ribs, with chili-spiked foie gras, tobacco peach glaze and poblano cornbread stuffing
Fifth dish: Smoked Brisket, with potato pave, green onion slaw and sweet & smoky BBQ sauce
Sixth dish: Banana cream pie, with whipped cream and vanilla wafers
